Place handfuls of cauliflower rice into zip lock bags, making sure you pack the rice down into the corners. When the bag is nice and full, try and get out as much of the air as you can and seal it.
I got 11 bags of cauliflower rice each with different weights but an average of about 270g or 9 1/2oz per bag. This is enough for 2 people. Freeze the cauliflower rice and grab a bag when you need one.
To cook:
Defrost a bag of cauliflower rice or if you’re in a rush, you can use the rice frozen in the pan and break it up as you go along. Defrosting in the microwave is quick and easy.
Heat 2 tablespoons of olive oil in a frying pan and add cauliflower rice. Cook stirring frequently for about 5 mins. If using frozen rice, stir and break up the rice completely in the frying pan and then cook for a further 5 minutes, stirring frequently.
Serve with your favourite dishes you would normally have over regular rice.
